Tips
- Boil the potatoes and carrots with their skins so they absorb less water and taste better.
- Let the vegetables cool completely before mixing with the mayonnaise, or it may split.
- Adjust the salt at the end and after resting, because cold dulls flavours.
Variations
- Levantine ensaladilla: with pickles such as gherkins and other vegetables in vinegar.
- «Ensaladilla marinera» from Murcia, served on long bread rings, and Castile and León versions with tuna belly on a wheat crust.
- Andalusian versions with prawns and other seafood.

Ensaladilla rusa: where it comes from.
Russian salad is attributed to Lucien Olivier, a Franco-Belgian chef at the Hermitage restaurant in Moscow, who is said to have created it around 1860 with luxury ingredients such as game and crab, plus potato and egg. However, earlier «Russian salad» recipes exist in cookbooks from 1846 and 1856, so the exact origin is debated.
It reached Spain early: it is mentioned in the Practicón of 1894. Today's popular version, with potato, carrot, tuna and mayonnaise, has become established as a bar dish and a family-celebration staple.
