Tips
- The potatoes should only be lukewarm when mixed with the egg, so the egg does not cook too soon.
- Beat the eggs without making foam: if they are whipped, the omelette turns out drier.
- The oil should be hot but not smoking: if too cold the potatoes soak it up, and if too hot they brown outside and stay raw inside.
- Flip the omelette away from the heat, using a plate the same size as the pan.

- With or without onion: the great national debate between «concebollistas» and «sincebollistas».
- Betanzos omelette (A Coruña): very juicy, barely set inside.
Story of the recipe
Tortilla de patatas: where it comes from.
Its origin is unclear. One of the earliest documented references is a Navarrese text from 1817 that mentions the tortilla as a way of stretching eggs with potatoes or other ingredients. There are also several legends, such as the one crediting the Carlist general Zumalacárregui during the siege of Bilbao in 1835, but they are unverified.
Other versions place it in 18th-century Extremadura, specifically Villanueva de la Serena. These attributions should be treated with caution: what is certain is that it is a humble, cheap and filling dish that today is regarded as a symbol of Spanish cooking.
