Tips
- The dough must be completely cold before shaping: if it is lukewarm, the croquettes lose shape and burst when frying.
- Fry only a few at a time so the oil temperature does not drop.
- For a firmer crust you can coat twice (egg and breadcrumbs).
- You can freeze the breaded croquettes and fry them straight from frozen.
Variations
- Croquettes of roast chicken, salt cod or cocido, which make use of leftover meat or fish.
- Some recipes add chopped hard-boiled egg to the dough or replace part of the butter with olive oil.

Croquetas de jamón: where it comes from.
The croquette was born in French cuisine: the earliest known recipe under the name «croquet» appears in the 17th century, in the work of the cook François Massialot, and it was conceived as a way of using leftovers. Béchamel as a binder became widespread in the 19th century, and some sources credit Carême with it.
In Spain the croquette became a national dish, above all with ham, and today it is one of the most common items on tapas bars and in home kitchens.
