Tips
- Brown the chicken well before stewing: it gives colour and flavour to the whole sauce.
- Cook the base slowly; the vegetables should be almost melted so the sauce is dense.
- Watch the salt: the ham already adds quite a lot.
- Like many stews, it is even better reheated the next day.
Variations
- With lamb or rabbit instead of chicken, very common within the same family of stews.
- With hen, in older versions that need longer cooking.
- With a little sweet paprika added at the end, and some cooks replace part of the wine with brandy.

Pollo al chilindrón: where it comes from.
Chilindrón is a stew deeply rooted in Aragonese tradition. Although it uses ingredients that came from the Americas, such as peppers and tomatoes, the recipe settled in the province of Huesca from the 19th century onwards; today it is central to the San Lorenzo festivities in Huesca, and a postage stamp was even dedicated to chicken chilindrón (2025).
The origin of the dish is disputed between Aragon, Navarre and La Rioja. There are several interpretations of the name, which the Aragonese Academy of Gastronomy records: it has been linked to an old card game, to a cooking technique or to the use of local peppers. One hypothesis says that the three vegetables of the stew (onion, tomato and pepper) correspond to the highest-ranking cards of that game.
