Tips
- Always fry the noodles before adding the stock: they take on flavour and form a film that keeps them from overcooking.
- Use solid noodles, not hollow ones, and keep a stock quantity a little over twice the weight of the noodles.
- If you see a few minutes are still needed at the end, add a little hot stock rather than cold water.
- Serve with lemon wedges, the usual seasoning for the dish.
Variations
- Different fish and shellfish can be used: monkfish, cuttlefish, squid, prawns or crayfish, depending on the area and the cook.
- There are simpler versions with cuttlefish, squid or only monkfish, and others with a more intense rockfish stock.
Story of the recipe
Fideuà: where it comes from.
Fideuà is attributed to Gandia (Valencia) and placed in the early 20th century, aboard the fishing boat «Santa Isabel». According to the most widespread version, the cook Gabriel Rodríguez Pastor replaced the rice with noodles because the captain monopolised the rice from the paellas; other versions say the rice had run out. Either way, the idea worked and the dish spread.
The International Fideuà Competition of Gandia, held since 1975, has helped make it an emblem of the city. Its name comes from «fideuada», a Valencian word for a large quantity of noodles, and the dish is cooked in a flat paella pan, although casserole versions also exist.
