Tips
- Crush the ñoras with raw garlic: this gives the stock its character and its typical colour.
- Choose fish with bones and flavour, even the kind that would not sell at the market: that is what makes a good stock.
- Measure the liquid carefully: the reference proportion is about 5 volumes of liquid to 1 of rice.
- The rice should end up between dry and brothy, never overcooked.
Variations
- The fish depends on the day's catch: small mixed fish, mullet, scorpionfish, sea bream or, in the Real Academia de Gastronomía recipe, mullet, grouper, sea bream and monkfish.
- The serving order varies by source: some serve the fish first and then the rice; others serve the rice first and the fish with its stock afterwards.

Caldero murciano: where it comes from.
Caldero is the most emblematic dish of the Mar Menor. According to the sources consulted, it was born in the 19th century among the local fishermen, who prepared it on the beach with small fish that had no market.
It is especially associated with Cabo de Palos and remains very much alive: Los Alcázares celebrates the Día del Caldero every year, when more than a hundred groups gather to cook and share it.
