Tips
- Desalt the meats well the day before, changing the water several times; otherwise the broth is too salty.
- The unto adds a lot of flavour but should be used in moderation.
- Cracking the potatoes instead of cutting them cleanly helps the broth thicken.
- Like many stews, it improves the next day.
Variations
- Depending on the season, grelos, cabbage, collard greens or other leafy vegetables are used.
- There are versions with chickpeas and with chestnuts.

Caldo gallego: where it comes from.
Caldo gallego is an emblematic dish of Galicia with written references going back to the 18th century. Its roots lie in peasant cooking and a subsistence economy, which made use of what the vegetable garden and the pig slaughter provided.
It rests on three pillars: white beans, potatoes that thicken the broth, and leafy greens such as grelos, which give it its characteristic bitter note.
