Tips
- The filling must be cold when assembling the pie: if hot, it dampens and tears the dough.
- Cook the sofrito slowly until juicy without excess liquid so the base does not get soggy.
- Let the pie rest a few minutes before cutting.

Empanada gallega: where it comes from.
The origin of the Galician empanada is humble and disputed. Some theories take it back to the times of the Suebi and Goths, others to Arab cuisine influences, and another sees it as practical food for pilgrims to Santiago de Compostela from the 12th century.
What is documented is its old presence in Galician culture: it is mentioned in the Cantigas de Santa María of Alfonso X, from the 13th century.
