Tips
- Choose good-quality veal and slice it thin: since it is two fillets, a cachopo has to cook quickly.
- The oil must be clean and very hot so the coating stays crisp and does not soak up grease.
- Seal the edges well so the cheese does not escape while frying.
- The fillets are pounded between sheets of plastic so the meat does not tear.
Variations
- One traditional Asturian version fills it with cecina (cured beef) and goat's cheese instead of ham and melting cheese.
- Cheeses that melt well are used in the filling, such as Gruyère, havarti or even blue cheeses.

Cachopo: where it comes from.
The history of the cachopo is not precisely documented. It is known to have become popular in Asturias in the mid-20th century, first as a dish of bars and family celebrations.
A much-repeated hypothesis presents it as the Asturian adaptation of the Austrian veal cordon bleu, although there is no definitive proof: its exact origin remains unclear.
