Tips
- Use short-grain rice, rich in starch: it is what gives the creaminess.
- Cook the rice in water first and add the sugar at the end: sugar added too early slows the cooking of the grain.
- Stir often over low heat so it does not stick and stays creamy.
- It thickens as it cools: take it off the heat while it is still a little looser than you want.
