Tips
- Do not beat the eggs vigorously: mix gently so the flan has no holes or bubbles.
- Always strain the mixture before pouring it into the mould for a fine texture.
- The water bath is essential: it protects the flan from direct heat and keeps it creamy.
- Chilling is part of the recipe: the flan sets and unmoulds better after a night in the fridge.
Variations
- Flan with cream: part milk and part liquid cream, creamier.
- With vanilla instead of lemon and cinnamon.
- In individual moulds: it cooks in less time, about 25 to 30 minutes at 180 °C.

Flan de huevo: where it comes from.
Flan is a dessert of ancient origin: it is said that the Romans already made dishes with egg and milk, and in the Middle Ages sugar was added. Over time, the version with caramel at the base became widespread in France and Spain. The modern form of French crème caramel is documented in La cuisinière provençale (1897) by Jean-Baptiste Reboul.
In Spain it is a classic of home cooking and set menus, made with basic ingredients: milk, eggs, sugar and caramel. The sources consulted do not allow us to say when or where the current recipe became popular.
