Tips
- Use day-old bread, dry but not rock hard: fresh bread falls apart too much.
- Take the pot off the heat when adding the paprika, since it burns quickly and turns bitter.
- Good stock improves the result a lot; the broth from cooking blood sausage (calducho) is a traditional alternative.
- Adjust the salt at the end, especially if you use ham or stock that is already salted.
Variations
