Tips
- Cook over a very low heat and skim often: the broth will be clear and tasty.
- If the water drops during cooking, always add hot water so the simmer is not interrupted.
- Cook the cabbage and potatoes separately so they do not cloud the soup broth.
- Keep to the serving order: it is what sets this stew apart from others.
Variations
- Some recipes, such as the one on Spain.info, include kid shoulder, cured ham and bacon alongside the chorizo, chicken and cecina.
- At the table, the meats are usually accompanied by a fried filling made from bread.

Cocido maragato: where it comes from.
Cocido maragato is the most representative dish of the Maragatería, the Leonese comarca whose main town is Astorga; it is also served in villages such as Castrillo de los Polvazares. Its distinctive feature is that it is served in the reverse order of other stews: it comes in three stages, the «vuelcos», starting with the meats, then the chickpeas with cabbage and potatoes, and finally the soup.
It comes from the traditional cooking of the people of the Maragatería and, without losing its humble character, is today a celebrated dish in the inns and restaurants of the area.
