Tips
- Cook each vegetable separately: each needs a different time, and this way they keep their colour and texture.
- Use the cooking water to bind the dish; it has more flavour than plain water.
- Use seasonal (spring) vegetables, as fresh as possible: the dish depends almost entirely on the produce.
Variations
- The La Rioja version with chard, cardoon and borage, in which the artichokes and chard are coated in flour and egg before being sautéed.
- A version with a light sauce of flour and meat or stew broth, instead of just oil and cooking water.
- The Navarrese menestra from Tudela is made without flour or stock, with each vegetable cooked separately.

Menestra is a dish that makes the most of the spring vegetable garden. It is associated above all with Navarre, where its origin is usually placed in Tudela, a town with a great horticultural tradition, and with La Rioja, where the official Spanish tourism portal lists it as a Riojan recipe.
There is no single recipe: each household picks the vegetables the season offers and the doneness of each, and some bind them with a light sauce while others serve them with just oil and ham.
