Tips

  • Cook over low heat without hurrying: pisto gains flavour with time and softens without falling apart.
  • Cut the vegetables into similar pieces so they cook evenly.
  • If the tomato is canned or crushed, taste and correct the acidity with a pinch of sugar.
  • It is even better the next day: reheated, it has more flavour.

Variations

  • The most purely Manchegan version, according to some purists, uses only green pepper and tomato; today onion, garlic and zucchini are usually added.
  • According to elDiario.es, the Villanueva de los Infantes version also includes lean pork, cooked first, and a fried egg, making it a main course.
  • Other Spanish pistos are different: the Andalusian alboronía has aubergine and squash, and the Bilbao pisto has bread.

Pisto manchego: where it comes from.

Pisto manchego is a sofrito of garden vegetables that began as a rustic recipe in La Mancha, traditionally cooked outdoors with the vegetables of each season. In its oldest form, according to some sources, it contained only green pepper and tomato.

One source links it to the Andalusian alboronía, but its exact origin is not precisely documented. In 2016 Villanueva de los Infantes (Ciudad Real) broke the Guinness record for the «world's largest pisto», at 1,254 kilos, according to press reports.
