Tips
- A splash of vinegar when serving, on top of the one in the paste, brightens the dish and gives it its characteristic edge.
- Fry the garlic and bread without burning them; if they turn bitter, the whole paste is spoiled.
- Frozen spinach works fine: drain it very well so the dish does not turn watery.
- It improves the next day, but reheat it gently.
Variations
- Many homes serve it topped with a boiled or fried egg, especially as a main course.
- Depending on the recipe, it is cooked drier, to eat with a fork as a tapa, or soupier, as a Lenten potaje.
