Tips
- Measure the rice and broth: in an earthenware dish, roughly twice as much broth as rice by volume.
- Broth from a cocido (chickpeas, meat, bone) adds a lot of flavour; do not replace it with water if you can avoid it.
- The rice finishes cooking in the oven, not before: do not stir it once it is in.
- Rest for a few minutes after taking it out of the oven so it can settle.
Variations
- Arroz con costra: covered with beaten egg and gratinéed in the oven to form a golden crust; a related Valencian recipe.
- With more or fewer chickpeas, or slightly different ingredients depending on the household (potato, tomato, garlic and paprika are common).
- With a hotter oven (about 250 °C) and a shorter time, around 19 minutes, according to some cooks.

Arroz al horno: where it comes from.
Baked rice is a traditional Valencian dish, especially rooted in the province of Alicante. Its origin is tied to the time when homes had no oven: families prepared the ingredients in an earthenware dish and took it to cook in the village's communal oven, hence its old name, "arròs passejat" (walked rice).
It has traditionally been made using the leftovers of the previous day's cocido, both the broth and the chickpeas and meats, which explains its humble, make-do character.
