Tips
- It is a leftovers dish: make it the next day with the remains of a well-cooked puchero or cocido.
- Fry the potatoes separately and add them at the end so they stay whole and slightly crisp.
- Adjust the broth carefully: ropa vieja should be juicy, not soupy.
- A little rest with the heat off helps the flavours blend.

Ropa vieja is a leftovers dish: the meat, chicken and chickpeas left over from the puchero become a new stew with a sofrito. The Canarian version is one of the best known and from the islands it travelled to the Americas, where, for example in Cuba, it became a national dish with a different recipe.
Its exact origin is debated and there are several explanations. One links it to old Sephardic leftover dishes; another to the look of the shredded meat, which recalls rags of old clothing. Neither is conclusively documented in the sources consulted.
