Tips
- Temper the mayonnaise with hot stock before adding it; if the stock is boiling, the mayonnaise will split.
- Do not let it boil after binding: serve the gazpachuelo right away.
- Stock made with bones and prawn shells has far more flavour than plain water.
- Make the mayonnaise with room-temperature ingredients so it emulsifies better.
Variations
- The oldest, simplest version uses a broth with cooked egg whites, bound with mayonnaise; bread, potato or rice were added later and, finally, fish stock.
- It is often served with slices of toasted or fried bread in the bowl, or with a few drops of sherry vinegar.

Gazpachuelo is a mayonnaise soup thinned with water or stock, traditional across the province of Málaga. Despite the name, it is unrelated to cold gazpacho: it is served hot and without tomato.
It is described as a dish of humble, seafaring origin that has evolved from a simple broth with egg whites bound with mayonnaise into today's dish, with fish stock, potatoes and pieces of fish or shellfish.
