Callos a la madrileña is an offal stew typical of Madrid, made with cleaned veal tripe, other gelatinous cuts and cured sausages. It emerged from tavern kitchens, where cheap cuts were put to use, and today it is considered one of the most emblematic dishes of the city's popular and tavern cooking.
Over time its fame moved beyond the taverns and tripe came to appear on the menus of restaurants in the capital. It is a winter dish, for a spoon and plenty of bread, whose secret is long, slow cooking.
