Preparation
Tips
- Brown the meat in batches, without crowding, so it sears rather than stewing in its own juices.
- The paste of liver, garlic, bread and paprika gives body and flavour to the sauce; do not skip it.
- The cooking time depends on the animal's age and the size of the pieces: test tenderness with a fork.
- It tastes even better reheated the next day.
Variations
- There is also a caldereta of Iberian pork, with ribs and secreto cut, to which vegetables such as carrot and potato are added.
- Calderetas of this kind exist in other livestock areas, such as Aragon, with small differences between them.
Story of the recipe
Caldereta extremeña: where it comes from.
Caldereta is a popular stew of sheep-farming areas, traditionally prepared in large quantities for festivals and celebrations, and it remains deeply rooted in Extremaduran rural culture.
It is cooked in an earthenware casserole, and its distinctive feature is the paste with liver, which binds the sauce.
