Tips

  • Low temperature and patience: the oil must never boil, or the gelatin will not bind.
  • Binding is all about movement: do it steadily, unhurried, with the dish slightly tilted.
  • If the sauce splits, add a splash of warm water and keep swirling the dish.
  • Use good-quality cod with the skin on: it is the source of the gelatin that binds the pil-pil.

Variations

  • Sieve method: instead of swirling the dish, the oil is agitated with a sieve inside the dish to bind faster.
  • Some leave the garlic in the oil, others remove it at the start and return it at the end.

Bacalao al pil-pil: where it comes from.

Pil-pil is a younger sauce than is often believed. One legend credits a Biscayan merchant, Simón Gurtubay, in 1836, but the first documented appearance of the word «pilpil» for a sauce is in Ángel Muro's Diccionario general de cocina of 1892.

The name is an onomatopoeia: it originally described the sound of oil heating gently. The emulsion as we know it today, bound with cod gelatin, took hold between the late 19th and early 20th centuries.
